Raw Vegan Chocolate Chip Cookie Dough Bites

These delicious vegan, oil-free, and gluten-free chocolate chip cookie dough bites are so simple and quick to make. They're perfect for any occasion!

Ingredients

  • 2 tbsps flaxseed meal this will be for the flax "egg"
  • 6 tbsps warm water
  • 1 cup almond flour
  • 1/3 cup turbinado sugar (raw sugar)
  • 1/4 cup almond butter you can also use peanut butter as a substitute
  • 1 tsp vanilla extract
  • 1/4 cup raw cacao nibs

Instructions

  • To make the flax "egg", combine the flaxseed meal with the 6 tbsps of warm water. Let it sit for approximately 5 minutes to allow it to thicken.
  • In a medium size bowl, mix together the following dry ingredients: almond flour, and raw sugar.
  • In a separate small bowl, mix together the almond butter, the flax "egg" mixture, and vanilla extract.
  • Combine the wet ingredients in with the dry ingredients.
  • Add in the chocolate chips and mix again.
  • Take a spoonful of cookie dough and roll into 1-inch balls.
  • Refrigerate for approximately 20 minutes before serving.

This recipe can be made modified into a low carb or keto-friendly recipe by replacing the raw sugar with a sugar substitute, such as Lakanto's Monkfruit Sweetener, and by replacing the chocolate chips with a vegan brand that uses a sugar substitute, such as Lily's Dark Chocolate Baking Chips.
