These delicious raw vegan, oil-free, and gluten-free chocolate chip cookie dough bites are so simple and quick to make. They’re perfect for any occasion!

Chocolate Chip Cookie Dough Bites (Vegan, Oil-Free, Gluten-Free)

 

Who use to love eating spoonfuls of cookie dough as a child?  Forget as a child, I still love eating spoonfuls of cookie dough!  The great thing about this cookie dough recipe is that it is actually SAFE to eat!  The elimination of eggs and dairy makes these tasty treats not only edible, but healthier and fun at the same time!

Chocolate Chip Cookie Dough Bites (Vegan, Oil-Free, Gluten-Free)

Chocolate Chip Cookie Dough Ingredients

For the chocolate chip cookie dough recipe, you will need the following ingredients:

• Flaxseed Meal (for the flax “egg”)

• Warm Water

• Almond Flour

• Turbinado Sugar (raw sugar)

• Almond Butter or Peanut Butter

• Vanilla Extract

• Raw Cacao Nibs

How to Make Chocolate Chip Cookie Dough

1.  To make the flax “egg”, combine the flaxseed meal with the 6 tbsps of warm water. Let it sit for approximately 5 minutes to allow it to thicken.

2.  In a medium size bowl, mix together the following dry ingredients: almond flour, and raw sugar.

3.  In a separate small bowl, mix together the almond butter, the flax “egg” mixture, and vanilla extract.

4.  Combine the wet ingredients in with the dry ingredients.

5.  Add in the chocolate chips and mix again.

6.  Take a spoonful of cookie dough and roll into 1-inch balls.

7.  Refrigerate for approximately 20 minutes before serving.

How to Store the Chocolate Chip Cookie Dough Bites

The cookie dough bites should be refrigerated in an airtight container.  They will last for approximately 3 to 4 days.  Enjoy! 🙂

Ingredients

  • 2 tbsps flaxseed meal this will be for the flax "egg"

  • 1/4 cup almond butter you can also use peanut butter as a substitute
  • 1 tsp vanilla extract
  • 1/4 cup raw cacao nibs

  • In a medium size bowl, mix together the following dry ingredients: almond flour, and raw sugar.

  • Combine the wet ingredients in with the dry ingredients.
  • Add in the chocolate chips and mix again.
  • Take a spoonful of cookie dough and roll into 1-inch balls.

Notes

This recipe can be made modified into a low carb or keto-friendly recipe by replacing the raw sugar with a sugar substitute, such as Lakanto's Monkfruit Sweetener, and by replacing the chocolate chips with a vegan brand that uses a sugar substitute, such as Lily's Dark Chocolate Baking Chips.
