Vegan Blueberry Walnut Muffins

Enjoy these delicious vegan blueberry, walnut muffins that are low-fat, oil-free, and just so yummy!

Ingredients

  • 2 cups whole wheat flour
  • 3/4 cup raw sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp sea salt
  • 1/2 cup unsweetened almond milk
  • 1/2 cup unsweetened applesauce
  • 2 tsp apple cider vinegar
  • 2 tsp vanilla extract
  • 1 cup blueberries fresh or frozen
  • 1/4 cup crushed walnuts

Instructions

  • Preheat oven to 350° F.
  • Line a 12-muffin tin with paper liners.
  • Mix together the dry ingredients.
  • In a separate mixing bowl, combine the almond milk, applesauce, vinegar, and vanilla extract.
  • Combine the wet ingredients with the dry ingredients.
  • Stir in the blueberries and walnuts.
  • Spoon the batter into each muffin cup, filling each cup about 3/4 full.
  • Bake for 25 minutes. Cool muffins on a wire rack.
