Ingredients

  • 2 tbsps flaxseed meal
  • 6 tbsps warm water
  • 1 cup almond flour
  • 1/3 cup granulated sugar-free sweetener such as Lakanto's Monkfruit Sweetener
  • 1/4 tsp sea salt
  • 1/4 cup almond butter
  • 1 tsp vanilla extract
  • 1/4 cup sugar-free vegan chocolate chips such as Lily's Dark Chocolate Keto Baking Chips

Instructions

  • To make the flax "egg", combine the flaxseed meal with the 6 tbsps of warm water. Let it sit for approximately 5 minutes to allow it to thicken.
  • In a medium size bowl, mix together the following dry ingredients: almond flour, granulated sugar-free sweetener, and sea salt.
  • In a separate small bowl, mix together the almond butter, the flax "egg" mixture, and vanilla extract.
  • Combine the wet ingredients in with the dry ingredients.
  • Add in the chocolate chips and mix again.
  • Take a spoonful of cookie dough and roll into 1-inch balls.
  • Refrigerate for approximately 20 minutes before serving. Enjoy!
