Raw Vegan Brownies

Looking for a quick dessert recipe that will satisfy your sweet tooth? These raw vegan brownies are quick and simple to make and so full of flavor! The whole foods found in this recipe replaces the flour, refined sugar, and oil that is found in a traditional brownie, which makes this brownie so much more healthy!

Ingredients

  • 1 1/2 cups pitted medjool dates pre-soak for 30 minutes if dates are not very moist
  • 1 cup raw walnuts
  • 1 cup raw cacao powder or raw carob powder any cocoa powder will work if you don't mind that it's not raw
  • 1 teaspoon ground instant coffee this helps to bring out the chocolate flavor
  • 1/4 teaspoon sea salt
  • 1 teaspoon vanilla extract

Instructions

  • In a food processor with an S-blade, blend together the dates and walnuts until you've reached a smooth consistency.
  • Then add in the rest of the ingredients and blend until well incorporated.
  • Remove the brownie mixture and form a single layer on a non-stick surface, such as in a silicone pan or on parchment paper.
  • Cut brownies into approximately 8 pieces. You can eat them as is or you can refrigerate them for about 30 minutes to get a more solid consistency.
  • Store them in an airtight container for up to 5 days in the refrigerator. Enjoy! :)
