Vegan Pineapple Unfried Rice

This very tasty rice dish is perfect for a summer meal and a whole lot healthier than traditional fried rice! The sweet and tangy flavor of the pineapple adds a nice addition to this recipe.

Ingredients

  • 1/4 cup vegetable broth low-sodium
  • 2 stalks green onions chopped
  • 1 clove garlic minced
  • 2 carrots chopped
  • 1/2 cup green peas
  • 1 1/2 cups pineapple chopped
  • 2 cups cooked brown rice
  • 1/2 cup cashews
  • 1/4 cup raisins
  • 2 tbsps lemon juice
  • 3 tbsps soy sauce or coconut aminos

Instructions

  • Heat a large non-stick skillet over medium-high. Saute both the green onions and garlic in the vegetable broth for approximately 2 to 3 minutes.
  • Add in the rest of the ingredients and lower the heat to a medium-low.
  • Continue cooking and stirring the rice mixture for approximately 10 more minutes. Serve and enjoy! :)
