Ingredients
1/4cupvegetable brothlow-sodium
2stalksgreen onionschopped
1clovegarlicminced
2carrotschopped
1/2cupgreen peas
1 1/2cupspineapplechopped
2cupscooked brown rice
1/2cupcashews
1/4cupraisins
2tbspslemon juice
3tbsps soy sauce or coconut aminos
Instructions
Heat a large non-stick skillet over medium-high. Saute both the green onions and garlic in the vegetable broth for approximately 2 to 3 minutes.
Add in the rest of the ingredients and lower the heat to a medium-low.
Continue cooking and stirring the rice mixture for approximately 10 more minutes. Serve and enjoy! :)
