Ingredients

  • 1 cup almond flour
  • 3 ounces sugar-free granulated sugar such as Lakanto's Monkfruit Sugar Substitute
  • 1/4 tsp sea salt
  • 1/2 cup peanut butter
  • 1 1/2 tbsps coconut butter
  • 1 tsp vanilla extract
  • 2 tbsps whole psyllium husks

Instructions

  • Preheat oven to 350 degrees F.
  • Prepare a baking sheet covered with parchment paper or a silicone mat.
  • Mix together the dry ingredients.
  • Mix together the wet ingredients to form the dough.
  • Roll the dough into 1 1/2-inch balls.
  • Place on baking sheet and flatten with a fork one way and then the other to create a crisscross pattern.
  • Bake for approximately 10 minutes. Let cool completely before serving.
