This delicious and simple vegan pumpkin bread recipe is perfect for the fall season!  Since this recipe is also oil-free, you can enjoy this tasty and hearty treat without the guilt!

Vegan Pumpkin Bread

This delicious vegan pumpkin bread is so perfect for the fall season!  It is both low-fat and oil-free, so enjoy this lovely treat without the guilt!  🙂

Ingredients

  • 2 cups whole wheat flour
  • 2/3 cup coconut sugar or brown sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 3/4 teaspoon sea salt
  • 1 15-ounce can pumpkin puree
  • 1/4 cup maple syrup
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon vanilla extract
  • Optional toppings: raw pepitas or pecans

Instructions

  • Preheat oven to 350°F.
  • Line a 9x5 loaf pan with parchment paper.
  • In a medium size bowl, combine dry ingredients.
  • In a small bowl, combine wet ingredients.
  • Add the wet ingredients to the dry mixture and mix well.
  • Pour batter into the prepared loaf pan.
  • Bake for approximately 60 minutes. Let cool slightly before serving.
