Chilled Cucumber Soup

Cool down this summer with this simple and tasty chilled cucumber soup that is raw vegan, low-carb, and oil-free!  This easy recipe only takes minutes to make with a high-speed blender, which is perfect when needing to quickly cool down in this summer heat!

Chilled Cucumber Soup: Raw Vegan, Oil-Free

Ingredients
-3 cups English cucumbers (approximately 2 English cucumbers), peeled and chopped
-1 avocado
-1 cup fresh coconut milk or reduced-fat canned coconut milk
-3 tablespoons lime juice
-3 fresh mint leaves
-Garnish: fresh mint leaves, diced cucumbers (optional)

Chilled Cucumber Soup: Raw Vegan, Oil-Free

Directions
Blend all ingredients in a high-speed blender until you’ve reached a smooth consistency.  Chill in refrigerator for approximately 2 hours before serving.  Garnish with mint leaves and diced cucumbers.  Enjoy!

Ingredients

  • 3 cups English cucumbers (approximately 2 English cucumbers) peeled and chopped
  • 1 medium avocado
  • 1 cup fresh coconut milk or reduced-fat canned coconut milk
  • 3 tablespoons lime juice
  • 3 mint leaves
  • Garnish: fresh mint leaves, diced cucumbers (optional)

Instructions

  • Blend all ingredients in a high-speed blender until you've reached a smooth consistency.

  • Chill in refrigerator for approximately 2 hours before serving.  Garnish with mint leaves and diced cucumbers.  Enjoy!
